When they began a North Jersey gourmet deli and catering service
in 1985, Warren Leeds and Christopher Schiavone quickly learned
a valuable lesson: The best way to attract and retain a demanding
clientele was to provide top-quality food and warm, caring service
every day — just like the finest, best-managed restaurants.
But could this traditional profit-and-loss style work in the corporate
food-service world dominated by management companies that rely
on subsidies?
In short order, they proved that it could. Their new company —
Dartcor — was overwhelming the competition with an innovative
philosophy that turned corporate food service into a valuable
asset instead of a subsidized afterthought.
Then as now, Dartcor’s high-energy employees manage each
café as if they own them. They do so by paying equally
close attention to the needs of guests and the requirements of
the bottom line. For example, while only the best, freshest food
is purchased to ensure high quality, we take multiple bids each
week on all produce and perishables to ensure low cost. Guest
feedback is sought constantly, too. If a special diet must be
accommodated, we do it; if a new dining trend develops, we’re
on top of it. We also design each kitchen for maximum efficiency
and savings. And our catering service, which emulates the success
of our early years, is always active, especially for executive
meetings, corporate special events, and private
school functions.
At the core of our approach is a recruitment program and a training
strategy designed to guarantee that only the most qualified chefs
and managers lead all our operations. Employees are screened for
winning attitudes and hospitality skills and they are trained
in food handling and sanitation practices.
